A Spoonful of Sugar & Pure Joy in 9×13 Dish

I talk to my neighbor friend Judy (Ju-Ju-Judy, as Bryan calls her, in a throwback to Andy Griffith) quite regularly about what to do with all the eggs we get from the chickens now.  I usually give her a dozen or so and we still never run out.  Anyway, she gave me this recipe, from a bed -n- breakfast cookbook she has (well, actually, I have it right now ’cause it’s still on my kitchen counter).

So on Thursday night, I made this and the neighbors came down to eat with us.  Boy Genius ate 4 helpings.  After his first bite, he said “Momma, I’ve got 2 words for you: hea. ven.”  I’ll admit, I was beaming.  Wonder Boy said as plainly as I’ve heard him: “I want more,” which, for the record, he usually only says about pizza or yogurt. I don’t think The Girl was as sold on it as the boys, but she did clean her plate moreso than usual.

I know I shouldn’t be surprised, since the fat content is probably through the roof – and the maple syrup doesn’t hurt the kid-appeal either.  Hopefully, the turkey bacon, skim milk and heart-healthy pancake mix canceled some of that out.  All in all, this one’s a keeper – ’cause anything I take the the time to make that actually gets eaten by the kids is a winner in my book.
